Just Peachy Smoothie

Start the day with a taste of summer! While the peaches are the star of the show, the unsalted cashews thicken this smoothie and make it a creamy, filling delight. And using spinach - or another mild green - in your smoothie is a great (and sneaky) way start getting your veggies in early in the day. Serve with your favorite whole grain bread for a complete breakfast.

  • Peach
    2
  • Unsalted cashews
    14 cup
  • Banana
    1
  • Spinach
    2 cups
  • Unsweetened Plant-Based Milk
    2 cups
  • Bread (whole-grain or gluten-free)
    2 slices
Directions (3 min • Super easy)
  1. Produce Prep: You can use frozen or fresh peaches. If using fresh peaches, rinse them and cut them into slices, removing the pit. Put the slices in a bag and place them in the freezer overnight. Soak the unsalted cashews in water overnight.

  2. Peel the banana. Drain the unsalted cashews. Combine the peach, unsalted cashews, banana, spinach and unsweetened soy/nut/rice milk in a standing blender and blend until smooth. Add a little water or additional milk to thin it out, as desired. You may prefer this with additional sweetener. Reach for extra banana or dates for the best smoothie sweeteners.
  3. Enjoy with a side of toasted whole grain bread.
