Just Peachy Smoothie
Start the day with a taste of summer! While the peaches are the star of the show, the unsalted cashews thicken this smoothie and make it a creamy, filling delight. And using spinach - or another mild green - in your smoothie is a great (and sneaky) way start getting your veggies in early in the day. Serve with your favorite whole grain bread for a complete breakfast.

- Unsalted cashews1⁄4 cup
- Banana1
- Spinach2 cups
- Unsweetened Plant-Based Milk2 cups

Produce Prep: You can use frozen or fresh peaches. If using fresh peaches, rinse them and cut them into slices, removing the pit. Put the slices in a bag and place them in the freezer overnight. Soak the unsalted cashews in water overnight.
- Peel the banana. Drain the unsalted cashews. Combine the peach, unsalted cashews, banana, spinach and unsweetened soy/nut/rice milk in a standing blender and blend until smooth. Add a little water or additional milk to thin it out, as desired. You may prefer this with additional sweetener. Reach for extra banana or dates for the best smoothie sweeteners.
- Enjoy with a side of toasted whole grain bread.
