Overnight Oats - Berries 'n Cream

With this overnight oats recipe, berries and cream bring a taste of summer to any morning of the year. Whip it together the night before, and breakfast is ready by morning. Berry magic!

  • Rolled oats
    1 cup
  • Unsweetened Plant-Based Milk
    1 12 cups
  • Banana
    1
  • Frozen mixed berries
    12 cup
  • Unsalted cashews
    14 cup
Optional
  • Maple syrup
    to taste
Directions (3 min • Super easy)
  1. Submerge the rolled oats in unsweetened soy/nut/rice milk, using roughly 1.5 times as much liquid to rolled oats.

  2. Cover the oatmeal and put it in the fridge overnight. The next morning you will find soft, fresh tasting rolled oats that won't stick to the bottom of the pan or boil over like cooked rolled oats.  That's right, NO cooking involved! 

  3. In the morning, mix in the banana, frozen mixed berries and unsalted cashews and sweeten lightly to taste. (You can leave the frozen berries out for a few minutes before adding to the soaked oats if you prefer as well!)

 


Note: No unsalted cashews? Any other nut or seed will do! The grocery store often runs out of frozen mixed berries, but frozen strawberries or another frozen fruit will still satsify!
